Ingredients
  • • 2lbs chicken breasts
  • • 3 cans great northern beans (white beans)
  • • 4 cups of chicken stock
  • • 1 cup white or brown rice
  • • 3 large carrots
  • • 1 stalk celery
  • 4 oz cream cheese
  • • 4 oz pepper jack cheese
  • • Minced garlic
  • • 1 White onion
  • • Italian seasoning
  • • Salt
  • • Pepper
  • • Cumin
  • • Garlic powder
  • • Onion powder
  • • Chili powder
  • • Paprika
  • • Vegetable oil

Directions

  1. Chop onion, carrots, and celery. Add to pot with olive oil and minced garlic. Cook on medium for 5 minutes.

  2. Add chicken breasts, stock, and seasonings to pot. Boil until chicken is cooked through (15 mins)

  3. Remove chicken from pot and shred; use 2 forks to shred. Return shredded chicken to pot.

  4. Dice pepper jack into small cubes.

  5. Slowly stir in pepper jack and cream cheese.

  6. Add beans and rice.

  7. Allow rice to cook until tender (~30 mins)

  8. Adjust seasonings to taste.

  9. Devour.
